For a quick celebration of my boyfriend’s new job, I made a dessert inspired by an apple upside-down cake I had the recipe for and instead of starting from scratch, this is the faster box recipe with pears not apples.
You will need:
1 box of pineapple moist cake mix
(additionally, the oil and eggs it calls for)
2 medium ripe pears
3/4 cup sugar
1/4 cup water
1-2 tablespoons of soy butter
In a sauce pan on medium heat, mix sugar, water, and butter together for 5-7 minutes until water dissolves and sugar is golden. Peel and slice pears and lay in a spiral around the edge of the cake pan. Add the heated sugar on top of the pears. Preheat your oven to 350 degrees or to the temperature called for on the cake mix box. Mix your cake ingredients together in a separate bowl and add to the top of the pears without moving them. Bake on top of cookie sheet to catch any escaped sauce from bottom of cake pan. Adjust time of baking if needed so that cake if fully baked and top is golden. Let rest and cool for 5-10 minutes before turning over and detaching the bottom (now top) on a cooling rack.
