Mahi-Mahi and Salsa!

Refreshing seafood meal with a tropical salsa. Enjoy this quick recipe.

Ingredients for 2 servings:

White Rice


Pineapple (1 cup)

Mahi-Mahi (2 slices)mahi

Grape Seed Oil


Preheat oven to 400 degrees

Dice pineapple

Add thin layer of grape seed oil to bottom of pan

Place down 2 cuts of mahi-mahi

Add 1/4 cup of pineapple on top of fish

Bake for 15-20 minutes, until fish is fully cooked

Cook 1 cup of rice in 2 cups of water (I use a rice cooker to save time)

Mix 1/2 cup of salsa with the 3/4 cup of pineapple
