Pork Dinner!

IMG_1033This is something I usually do with beer as a substitute for water in the rice, today I just used water.

All you need is:

Pork Loin

Mojo Marinade

Salt & Pepper

Yellow Rice Packet

Water 2 1/2 Cups OR 2 1/2 Cups of Lager (any yellow, lite beer)

Asparagus

Roasted Garlic Seasoning

Preparation:

Put pork in mojo marinade and keep in the fridge overnight

Now:

Preheat oven to 350 degrees

Add salt and pepper to pork

Bake in oven for up to 70 minutes if you do not like seeing any pink

In a pot, bring yellow rice with 2 1/2 cups of water (or beer) to a boil and then once it begins to boil, cover, turn low, and let simmer for 20 minutes

Cut ends of asparagus, place on baking sheet and drizzle on olive oil

Spice with some roasted garlic seasoning, salt and pepper

Place in oven with pork for about 20 minutes
