Strawberry Rhubarb Pie!

Pie GuardMy cat Winston-Salem helped me bake a tasty strawberry rhubarb pie on Friday. He likes to think of himself as my personal taste-testing assistant! He actually did very well guarding the pie and did not try to stuff his face in it. 🙂 We used simple ingredients to make this pie, you can see there was so much filling, it overflowed. So, you could make two smaller pies or just put a baking sheet underneath to catch any drippings.

Rhubarb and Strawberry

You Will Need:

1 pound of strawberries and 1 pound of rhubarb chopped

*If you add another pound of strawberries, a second pie would be a good idea!

1 cup of sugar

1/2 cup of flour

2 pie crusts, or 4 pie crusts (for 2 pies)Pie Filling

To Bake:

Preheat oven to 375 degrees Fahrenheit

Mix ingredients together

Lay down first pie crust in pie pan and add in mixed ingredientsPie

Lay pie crust over and pinch top and bottom crusts together

Bake for 70 minutes, crust should be golden
