Beef Summer Stew!

IMG_1291Everyone, including the cat, loves stew in our house. This stew was very simple to make. Remember you can always substitute ingredients, or add more or less, depending on personal preference! My measurements are not precise, and the beauty is that they don’t have to be!! 🙂 

Ingredients:

  • 1 tbsp olive oil
  • 2 cups beef broth
  • 1 lb beef cuts
  • 1 handful baby carrots, chopped
  • 1/4 onion, chopped or diced
  • 1 can diced tomatoes
  • 1 microwaveable/steamed sweet potato, chopped
  • 1 Lipton Beefy Onion soup & dip mix packages
  • 1 tsp garlic, powdered
  • 1 tsp onion, powdered
  • 1 – 1 1/2 tsps ginger, powdered
  • 1 tsp salt & pepper
  • 2-3 tbsps cornstarch

Directions:

Begin to sauté beef cuts and onions in pot with olive oil on medium-high heat

Begin to microwave sweet potato in plastic casing for about 7 minutes, then chop up, leave on the skin

When beef is almost cooked through, add broth, Lipton package, carrots, can of tomatoes, and the chopped steamed sweet potato

Bring to boil, stir, add in spices

Lower heat, stir in cornstarch, place lid on pot and let simmer for up to 20 minutes
