The most amazing thing happened a couple weeks ago that has changed my life and hopefully yours too! There is a cheddar cheese that is naturally lactose-free- Cabot. AND, it doesn’t stop there, it is naturally gluten-free too! If you are severely lactose intolerant, this is your cheesy day!! Never again do we have to put fake cheddar cheese on our tacos or salads!
So to celebrate, make a sandwich, with cheese!
I used Black Forest ham, Cabot’s “Seriously Sharp” White Cheddar and a homemade spinach and white kidney bean spread/dip on a sweet blueberry bagel! For my side, I had some extra cheese slices (because why not) and original flavored Ritz Toasted Chips.
The spinach and white bean spread/dip is exactly what it says: a bag of fresh spinach and 1/2 – 1 drained can of white kidney beans, plus some olive oil, salt, pepper, 1-2 cloves of garlic, a pinch of powdered onion and 3-4 tablespoons of soy butter. Try it toasted or warmed!
